Description
Bolormaa Malvasia Emilia IGP by Podere Giardino Winery is a classic brut nature white method produced with Malvasia Aromatica di Candia grapes, which offer a characteristic floral bouquet and citrus notes on the nose.
Straw-yellow in color, this Emilia IGP sparkling wine stands out for its persistent and delicate foam. In the mouth, it is fresh and sapid, perfect to accompany traditional Reggio dishes such as fresh and stuffed pasta, Parmigiano-Reggiano, fried dumplings, and cured meats, but also excellent as an aperitif.
The vinification involves a soft pressing of the whole bunch and a spontaneous fermentation on its lees, with clarification only by racking and without filtration. The first fermentation takes place in stainless steel, while the second and the refinement take place in the bottle for a good 20 months, before disgorgement pas dosè.
It is recommended to serve at 10°C to fully enjoy its characteristics.

VINIFICATION: whole cluster soft pressing; spontaneous fermentation on its own lees; clarifications only through decanting, no filtrations; 1st fermentation in stainless steel, 2nd fermentation and aging in the bottle for 20 months, disgorgement pas dosè.
TERRITORY: Reggio Emilia high plain, Municipality of Reggio Emilia.
SOIL TYPE: loamy, clayey-sandy.

CULTIVATION AND AGE: 15-year-old Guyot/Espalier system.

CHARACTERISTICS: persistent and delicate foam; characteristic floral aromas with citrus notes. Fresh, savory.
RESIDUAL SUGAR: 6 (six) gr/l.
TOTAL ACIDITY: 6.70 g/l.
SULFUR DIOXIDE: without the addition of sulfites; natural content < 10 mg/liter.
PAIRINGS: with traditional Reggio dishes, fresh and filled pasta, Parmigiano-Reggiano, fried dumplings, and cured meats. Excellent as an aperitif.
