VINIFICATION: whole cluster soft pressing, spontaneous fermentation on its own lees; clarifications only through decanting, no filtrations; 1st fermentation in stainless steel, 2nd fermentation and aging in the bottle for 50 months.
TERRITORY: Reggio Emilia high plain, Municipality of Reggio Emilia.
SOIL TYPE: loamy, clayey-sandy.
PRODUCTION METHOD: organic, reg. CE 834/07, reg. CE 1584/18, reg. CE 203/12; Certification body aut. Mipaaf ITBIO 006, operator code H1912.
TRAINING AND AGE: Spurred cordon/Espalier of 23 years.

CHARACTERISTICS: persistent and delicate foam; sweet aromas of candied fruit, almonds, pastry, a surprising taste-olfactory complexity. Fresh, savory, and excellent acidity.
RESIDUAL SUGAR: 0 (zero) gr/l.
TOTAL ACIDITY: 6.80 gr/l.
SULFUR DIOXIDE: 30 mg/l.
PAIRING: with the dishes of the Reggio tradition, fresh and filled pasta, Parmigiano-Reggiano, cold cuts, but also with fish dishes. Excellent as an aperitif.
