Carmu is a white wine from the Umbrian winery Almaraminga born from the only partially macerated native grapes of Trebbiano Spoletino. Following the sentence that is written on the label of the bottle.

NAME: “Carmu”, in Italian “calm” that is firm.
LOCALITY: hills south-east of Spoleto with east exposure.
SYMBOL ON THE LABEL: “Lu Quintanone”; symbolic statue of the Giostra della Quintana in Foligno. It represents the god Mars and is the simulacrum placed in the center of the Campo de li Giochi in the intersection of the diagonals, with the outstretched arm, which holds the rings contested by the knights in the battle.
GRAPE VARIETY: 100% native Umbrian Trebbiano.
SOIL TYPE: clayey and sandy hills with a good presence of skeleton in the hills south-east of Spoleto with east exposure.
VINEYARD FEATURES: planted in 2010, planting layout 2.80 x 1 m
TRAINING SYSTEM: spurred cordon and Guyot.
COLLECTION METHOD: manual in cassettes.
PERIOD: mid-October.
CRUSHING: it is not carried out, the whole de-stemmed grapes are placed directly in the press.
PRESSING: very soft, carried out with a hydraulic press.
FERMENTATION: with spontaneous yeasts in a stainless steel tank with 20% of whole berries without temperature control.
RACKING: at the end of fermentation the skins are removed and the wine is decanted.
AGING: in steel containers for about 8 months with the fine lees.
BOTTLING: manual without clarification or filtration.
ADJUVANTS: no extraneous product is added to the grape with the exception of a small amount of sulfur before bottling.
ORGANOLEPTIC CHARACTERISTICS: it has a bright golden yellow color, sinuous in movement in the glass. It expresses delicate aromas of fresh and withered flowers with nuances of candied orange, tea leaf and Mediterranean aromatic herbs. In the mouth it is fresh and enveloping, mineral and savory with references of saffron and marzipan.
